Spiced Chocolate, Raspberry and Pistachio Pots
Yesterday I was doing some online research to find out what spices might go with chocolate and pistachios for a biscuit recipe I'm adapting, when instead I found a recipe for Spiced Chocolate, Raspberry and Pistachio Pots. It sounded as if Jon would like it, so I decided to give it a go.
It is a really simple recipe to follow. I currently don't have ground cardamom, so had to grind the seeds myself with insufficient tools, but since such a small amount is needed even this was not too big a deal. The chocolate did not take long to melt and, using my electric whisk, it only took a few minutes to whisk the egg whites until they were stiff. Another few minutes later I had the results chilling in ramekins in the fridge. :)
Jon tried one after dinner. He said he liked it, although something about the taste was a little unusual. He suggested I try making it with hazelnuts or almonds next time, so I will! If you're looking for chocolate puddings that are low in calories, why not try this recipe for yourself?
